It may be a representation of the goats Tanngrisnir and Tanngnjostr who pulled Thor’s sky chariot. In Scandinavia Father Christmas is often depicted riding a goat. This could be simply the viking version of Santa’s reindeer. Also, the Amish don’t speak dutch. Pennsylvania Dutch is a bastardization of deutsch (german).
